Ingredients
- 1.5 Pounds Shrimp raw, 26-30 count
- 1/2 Cups Flour all purpose
- 4 Eggs
- 1 Cup Panko Bread Crumbs
- 3/4 Cup Sweetened Coconut Flakes
- Salt to taste
- black pepper to taste
- Vegetable Oil for frying

Instructions
- Set three shallow dishes on a clean work space next to each other.
- In the first dish, add flour and season with salt and pepper.
- In the second dish, place the eggs and lightly beat with a fork.
- In the third dish, mix the panko and coconut flakes.
- Working in small batches toss the shrimp in the flour. shake off excess flour.
- Dip shrimp in egg wash and then dredge in panko/coconut.
- Transfer shrimp to a parchment lined baking sheet.
- Heat 1/2 inch of oil in a large saute pan to 350 degrees.
- Again working in small batches, fry the shrimp until golden brown, 5-6 minutes, turning once during cooking.
- Remove shrimp to paper towel lined plate.
Recipe Notes
If you wish to bake the shrimp, stop after step 7. Bake in a preheated 400 degree oven for 12-15 minutes. Turn once during baking.
Serve with Spicy Apricot Dipping Sauce
