Roasted pears are an easy way to give any meal an elevated look. These can be served as is for dessert or as a side. Add chocolate for an even better dessert or add red onions when roasting and put on top of a pork chop. The possibilities are endless when it comes to this delicious fall treat.

  1. Preheat oven to 425 degrees
  2. Cut pears in half vertically. Remove the seeds.
  3. Lay pears, cut side up, on parchment lined baking sheet.
  4. Brush generously with honey butter and the sprinkle with cinnamon.
  5. Place in oven and roast until tender, about 20 minutes.
Recipe Notes

Roasted pears can be served warm or cold.

  3. With blender running, slowly add olive oil until vinaigrette is emulsified.

  1. Set three shallow dishes on a clean work space next to each other.
  2. In the first dish, add flour and season with salt and pepper.
  3. In the second dish, place the eggs and lightly beat with a fork.
  4. In the third dish, mix the panko and coconut flakes.
  5. Working in small batches toss the shrimp in the flour. shake off excess flour.
  6. Dip shrimp in egg wash and then dredge in panko/coconut.
  7. Transfer shrimp to a parchment lined baking sheet.
  8. Heat 1/2 inch of oil in a large saute pan to 350 degrees.
  9. Again working in small batches, fry the shrimp until golden brown, 5-6 minutes, turning once during cooking.
  10. Remove shrimp to paper towel lined plate.
Recipe Notes

If you wish to bake the shrimp, stop after step 7.  Bake in a preheated 400 degree oven for 12-15 minutes.  Turn once during baking.

Serve with Spicy Apricot Dipping Sauce

  1. Place bacon lardons in a medium saucepan. Stirring regularly, render bacon over medium heat until bacon just starts to crisp, 10-15 minutes.
  2. Use a slotted spoon to remove bacon to a paper towel lined plate.
  3. Add onion and garlic and cook until translucent, 5-7 minutes.
  4. Using the same slotted spoon, remove the onion and garlic from bacon fat. Drain fat.
  5. Return all ingredients to the pan and cook over low heat for 60-90 minutes. Stirring every once in a while. The liquid will reduce and for a syrup like consistency.
  6. Remove jam from pan and store in an airtight container in the refrigerator.

  1. Preheat oven to 350 degrees.
  2. Combine brown sugar, chili powder, tequila, pepper sauce, and lime juice in a small bowl and mix well.
  3. Place a wire rack over a foil lined baking sheet.
  4. Brush both sides of bacon with tequila glaze and space evenly on wire rack.
  5. Bake in preheated oven for 15 minutes.
  6. Turn bacon over and continue cooking until slightly crispy and the edges are dark, 10-15 minutes more.
  7. Remove bacon from over and allow to cool slightly. Remove bacon from rack while it's still warm to avoid it sticking.
