  1. Set three shallow dishes on a clean work space next to each other.
  2. In the first dish, add flour and season with salt and pepper.
  3. In the second dish, place the eggs and lightly beat with a fork.
  4. In the third dish, mix the panko and coconut flakes.
  5. Working in small batches toss the shrimp in the flour. shake off excess flour.
  6. Dip shrimp in egg wash and then dredge in panko/coconut.
  7. Transfer shrimp to a parchment lined baking sheet.
  8. Heat 1/2 inch of oil in a large saute pan to 350 degrees.
  9. Again working in small batches, fry the shrimp until golden brown, 5-6 minutes, turning once during cooking.
  10. Remove shrimp to paper towel lined plate.
Recipe Notes

If you wish to bake the shrimp, stop after step 7.  Bake in a preheated 400 degree oven for 12-15 minutes.  Turn once during baking.

Serve with Spicy Apricot Dipping Sauce
