Street Corn - Elote
- 4 Ears Sweet Corn husks pulled back and cleaned
- Elote Dry Rub recipe below
- Elote Wet Rub recipe below
- 2 Tablespoons Cilantro chopped
- 4 wedges Lime optional, for garnish
Elote Wet Rub
- 1/4 Cup Mayo
- 1/4 Cup Sour Cream
- 1/2 Cup Cotija Cheese grated Parmesan can be substituted
- 3/4 teaspoons Abobo Seasoning any chili powder will work
- 1/2 teaspoons Cumin
- 1 Lime zest and juice
Elote Dry Rub
- 1/4 Cup Cotija Cheese grated Parmesan can be substituted
- 1/4 teaspoon Adobo Seasoning any chili powder will work
- 1/8 teaspoon Cumin

Instructions
Street Corn - Elote
- Preheat charcoal or gas grill for direct medium-high heat.
- While grill is heating prepare the wet and dry rubs.
- Once grill is ready, grill corn until it is slightly charred on all sides, 7-10 minutes.
- Remove corn from grill and brush a generous layer of wet rub on all sides of corn.
- Sprinkle dry rub on corn and serve with chopped cilantro and lime wedges.
Elote Wet Rub
- Combine all ingredients in a medium bowl and mix well. This can me made ahead of time and refrigerated.

- Combine all ingredients in a small bowl and mix well. This can me made ahead of time and refrigerated.
Recipe Notes
I like to tie the husks back using butcher's twine to make a handle.
