- 4 Cups 2% Milk
- 4 Eggs
- 1 1/2 Cups Sugar
- 1/2 Teaspoon Salt
- 7 Ounces Starlight Mints (Divided)
- 2 Tablespoons Vanilla
- 4 Cups Half & Half

Instructions
- In a heavy saucepan over low heat, combine milk, eggs, sugar, salt and half the mints. Stir constantly until the mixture begins to bubble.
- Increase heat to medium and continue to cook, stirring constantly, until mints have dissolved.
- Cool mixture completely.
- Place remaining mints in a food processor and pulse to chop into small smaller pieces (can also use a meat tenderizer).
- Add chopped mints, vanilla, and half & half.
- Freeze according to instructions on ice cream maker.
- Place in a freezer-proof container and freeze until solid, about 1 hour.
