Instructions
  1. In a heavy saucepan over low heat, combine milk, eggs, sugar, salt and half the mints. Stir constantly until the mixture begins to bubble.
  2. Increase heat to medium and continue to cook, stirring constantly, until mints have dissolved.
  3. Cool mixture completely.
  4. Place remaining mints in a food processor and pulse to chop into small smaller pieces (can also use a meat tenderizer).
  5. Add chopped mints, vanilla, and half & half.
  6. Freeze according to instructions on ice cream maker.
  7. Place in a freezer-proof container and freeze until solid, about 1 hour.
