This is one of my father's "recipes". I use the word recipe lightly as it was more a list of ingredients and would depend on what we had in the house. I took his frame work and made it an actual recipe that I use to this day. At home, I still do it his way and use what ever I have one hand.

  1. Combine all ingredients in a small sauce pan.
  2. Heat over medium heat, stirring occasionally, until butter has melted and all ingredients are well mixed, about 10 minutes.
Recipe Notes

Extra glaze can be stored in an airtight container in the refrigerator for future use.

Orange Mint Rice
Spruce up your normal white rice with this flavorful and bold orange mint rice. I served this with some delicious coconut shrimp but the sky is the limit for this wonderful side dish.

  1. Melt the butter in a medium sauce pan over medium-high heat.
  2. Add the rice and saute over high heat for 5 minutes. Stir frequently.
  3. Add salt and pepper. Be generous, but remember you can always add more later.
  4. Pour the orange juice over the rice. The rice should be so hot the orange juice sizzles as you add it.
  5. Bring the orange juice to a boil. Reduce heat to a simmer. Cover the rice and cook until the rice has absorbed all the juice. This should take approximately 25 minutes.
  6. Once rice is done, fluff with a fork.
  7. Add mint immediately before serving as it will turn brown.
Recipe Notes

For a quick and easy version of this recipe use a rice cooker. Follow the instructions for your specific rice cooker but substitute orange juice for water.
