This is one of my grandmother's recipes that has been a part of our family gatherings for as long as I can remember. It is a must have for us. It is quick, easy, and delicious. It is almost always the first bowl to go empty. This recipe was featured by the Minnesota Vikings as part of their game day apps during my time in Minneapolis.

  1. In a large bowl, combine cheese spreads and cream cheese. Mix well.
  2. Add chopped celery and onions. Mix again.
  3. From into desired shape.
  4. Refrigerate overnight.
  5. Remove from refrigerator and roll cheese mixture in chopped parsley and pecans.

Asiago Cheese Dip
This is another family standard around Christmas time. This dish can be made ahead of time and then baked when needed making it an easy addition to any gathering. It's best served hot, but holds up well over time. Serve with an assortment of crackers, crostini, or chips.

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, combine the mayo, sour cream, 1/3 cup Asiago, green onions, and sun-dried tomatoes. Mix well.
  3. Place into an oven safe 1 quart casserole dish.
  4. Top with 1 tablespoon Asiago cheese.
  5. Bake until top is golden brown and bubbly, about 30 minutes.

Grated Parmesan can be substituted if needed.

  1. Heat saute over medium-high heat.
  2. Once pan is hot, add olive oil.
  3. Carefully add garbanzo beans.
  4. Saute garbanzo beans for 15-20 minutes stirring frequently.
  5. Using a slotted spoon, remove garbanzo beans to a paper towel lined bowl.
  6. Remove paper towel and toss with paprika and salt.

I hate to admit it but I used to use bulk pre-made croutons at the first restaurant I was the chef at. I resisted for so long making my own. At the time it was more an issue of time then quality. That all changed the day I made croutons from scratch for a private party. I sneaked a fresh crouton of the pan and popped it my mouth and never again did I use pre-made croutons.

  1. Preheat oven to 350 degrees
  2. Cut bread into small cubes and place in a large bowl.
  3. Drizzle warm bacon fat over bread.
  4. Add parsley, paprika, onion powder, salt and pepper to bread.
  5. Toss well to combine but gentle enough to not break the bread apart.
  6. Place bread crumbs on a baking sheet in a single layer.
  7. Bake 15-20 minutes, stirring once or twice, until croutons are golden brown.

This is one of my father's "recipes". I use the word recipe lightly as it was more a list of ingredients and would depend on what we had in the house. I took his frame work and made it an actual recipe that I use to this day. At home, I still do it his way and use what ever I have one hand.

During our Elote craze at Dotzy's, we had an enormous amount of corn on hand. So I roasted some off and added some other fresh vibrant vegetables and made this delicious and visually appealing salad. This is a great addition to any summer meal, from burgers, to barbecue, to grilled steaks. Make a smaller amount, and this is a great salsa for any Mexican dish you might be preparing.

  1. Preheat charcoal or gas grill for direct medium-high heat.
  2. While grill is preheating, prepare the rest of the ingredients for your salad.
  3. Once grill is ready, grill corn until it is slightly charred on all sides, 7-10 minutes.
  4. Remove corn from grill. Place corn on a cutting board and using a sharp knife, carefully cut kernels off of cob.
  5. Place corn kernels in a large bowl and add remaining ingredients. Mix well.

This creamy aioli is so simple yet lends it's bold flavor to anything you put it on. I first made this aioli to accompany my bourbon bacon BLT but have since found several other uses including a dipping sauce for fries or a burger topper.

  1. Measure the mayo into a small bowl.
  2. Using a sharp knife, mince the garlic cloves.
  3. Add garlic to bowl then add freshly ground black pepper.

  1. Preheat oven to 350 degrees.
  2. Combine brown sugar and bourbon in a small bowl and mix well.
  3. Place a wire rack over a foil lined baking sheet.
  4. Brush both sides of bacon with bourbon glaze and space evenly on wire rack.
  5. Bake in preheated oven for 15 minutes.
  6. Turn bacon over and continue cooking until slightly crispy and the edges are dark, 10-15 minutes more.
  7. Remove bacon from over and allow to cool slightly. Remove bacon from rack while it's still warm to avoid it sticking.
Recipe Notes

Be careful as bacon can burn rather quickly so always keep an eye on it.

If you prefer your bacon less crispy do not flip bacon and remove from oven when desired.
